<description><![CDATA[ The great thing about cooking is the experimentation and the praise you receive when you turn out yet another fabulous mean or dessert. What isn't so great is the mess left behind that you will have to tidy up later.<br /><br />This has bugged us for generations, well, since the days of masters and servants ceased to exist. At one time, all our ancestors had to do was sit at the table, have their meals brought to them and then retire. The staff downstairs had to worry about all the tidying up.<br /><br />Even if you couldn't afford the luxury of servants, you were probably so poor that your diet was very limited, thus leaving very little tidying up to do afterwards.<br /><br />The thing is, with today's so called time saving gadgets, there seems to be more mess than ever. As well as utensils we have used, there are also a stack of appliances such as blenders that need to be cleaned out.<br /><br />Of course, you may well be very wealthy and not have a clue what I'm actually talking about, but I'm guessing not. Ok, you may have a cleaning lady a couple of times a week, but a bombsite kitchen isn't really something you want to leave for her.<br /><br />I've tried various things over the years, mostly unsuccessfully. The one I'm going to tell you about now however seems to have made life an awful lot easier, so why not give it a try yourself.<br /><br />As you finish using each piece of equipment, wash it. This means that everything is getting washed quickly as you go and there is no build up which will take a lot longer to wash and put away. Adopt this method next time you are in the kitchen<br /><br />So in future, no more stacking up dirty dishes and leaving them until the end. Facing a pile of dirty pots and pans can be soul destroying, so make life easy for yourself and clean as you go. Now when you've finished whatever you have made, you can sit down and relax, not be stuck at the kitchen sink for a good hour. ]]></description>

<description><![CDATA[ Do you enjoy visions of your family sitting down to a delicious holiday meal? Do you also have nightmares of a burnt turkey as the centerpiece to your meal? To help avoid a disastrous holiday meal, you should choose the best turkey roasting pan. I recommend a stainless roasting pan. If you have the wrong roaster, you could end up with unevenly cooked meat, a pan so heavy you strain yourself lifting it out of the oven, and burnt gravy.<br /><br />The initial consideration when choosing a roasting pan is size. Measure your oven and choose a pan that will fit, but will also have 2 inches of space between it and the oven walls so that air may circulate. Also, you don't want an over-sized pan that will allow too much space in the pan and around your meat. This will cause the juices to thinly fill these areas and burn.<br /><br />The material of your roasting pan is important. You want your pan to be light, sturdy and to conduct heat well. Aluminum conducts heat well, but it reacts badly to the acids in lemons and tomatoes which can affect the taste of your food. Stainless steel in non-reactive and not too heavy or fragile, as stoneware can be. However, stainless steel is not a good conductor of heat. Therefore, I recommend a heavy stainless roasting pan layered with sheets of aluminum and/or copper.<br /><br />Your turkey roasting pan must also be able to stand up to high oven temperatures and the high direct heat of the stove top. You often will want to use your roaster on the stove top to sear the meat and also to make gravy after roasting. Some lightweight pans can buckle under high-heat conditions. The poorly made pans can also distribute heat unevenly and cause burning and scorching of your roast or gravy.<br /><br />Another factor to consider is how your pan is made. A rectangular shape with sides that are rounded is best. The round corners make for easier cleaning. In addition, the height of the pan matters. You want sides that allow good air circulation but also have enough height so that juices don't spill when you are taking your roast out of the oven. A great height for the sides of the pan is between 2.5 and 3 inches. Also, know that the kind of handles on your roaster are important. More inexpensive pans have handles that fold down and are very hard to hold with potholders. Some handles stick straight out from the sides of the pan and waste space in your oven. Therefore, you should look for strong, riveted handles that come straight up from the pan.<br /><br />Additional items you may look for to go with your pan are forks and a rack. Heavy forks are very much appreciated at that moment when the roast or turkey must be transferred out of the pan. ]]></description>
